Gap year letters of recommendation?

Hey guys!

I am a rising undergrad senior and I'm planning on taking at least 1 year off before applying/taking the DAT (I will be studying/taking last minute classes, volunteering, shadowing, traveling, etc...).
What should I do about recommendation letters? I can definitely get a good one from a dentist, but by the time I apply I won't have much interaction with my undergrad science professors. Should I ask for letters and just keep them safe during my gap year until I actually apply?

PS the classes I would be taking during the gap year are physics 1 and physics 2 at a CC (I probably wouldn't get very personal letters from the professors) and some free online courses to study for the DAT.
