If I'm applying ED on June 1st, can I take the MCAT on May 24th. Because all the LORs, transcripts, etc. have to be verified and my MCAT will be verified as soon as it is sent.

Unless you are absolutely 1000% certain you want to go to that ED school and will get a MCAT score that will be competitive for that school, applying ED will hinder your opportunities to apply to other schools until a later date, and put you at a disadvantage against other applicants.
