I don't make lists, but I will comment on what stood out for me as an area of improvement as you requested. I do suggest you ramp up your outreach to schools near the top of your list.

sGPA: around 3.9 I believe.

Currently a junior at a BIG10. Not planning on taking a gap year unless it's recommended!

Clinical experience (volunteer and non-volunteer):
550 hours as MA at a free clinic (volunteer).
1250 hours as a scribe/MA (non-volunteer).
280 hours as a pharmacy tech (non-volunteer).

Research experience and productivity:
Around 350 hours at lab. 1 abstract published. Hoping to possibly get a publication as well.

Shadowing experience and specialties represented:
Upcoming ER shadowing for ~50 hours and primary care ~50 hours.

Non-clinical volunteering
30 hours as a t-ball coach.
75 hours as a youth sports (kind of niche sport) coach. Plan a lot of practices as an assistant coach.
50 hours as a tutor for young kids.

Other extracurricular activities (including athletics, military service, gap year activities, leadership, teaching, etc):
Club sport for a year. Tutor for organic chemistry I/II and biochemistry at my college.

My sophomore year I worked full time as the scribe/MA while taking a full course load.

You have a good list and should receive several interviews. You could remove the state public schools that accept few non residents with no connection to the state including FSU, U Florida, LSU, UNC, Minnesota, Tennessee and the South Carolina schools.
