I know that adcomms dont care much for anything in high school, but what about officiating. I worked for the YMCA for 2 years and during that time I officiated basketball games, soccer, volleyball, and even baseball.

It certainly shows responsibility and the ability to focus on small details for a long period of time (just like a doctor).

Is this a good/interesting thing to list on my future application?

I wouldn't suggest dedicating one of your fifteen activities slots to JUST officiating. However, it's always nice to have one slot for hobbies and non-academic interests. In that spot, you can talk about your officiating as well as any other interests you may have.
