How do schools know if you've waived your rights to access LORs...?

Especially if you use a service like interfolio?
I only ask b/c so far I've been using my school's career center to send LORs, and I've waived them

I'm submitting an additional letter thru interfolio, but how will schools know if it's waived?

I believe that interfolio provides information along with the letter that states that the letters contents have not been seen by the applicant
