how many dental schools should I apply to?

Hi!
I go to USC right now and my stats are:
3.91 GPA
23 TS, 23PA, 22 SS
I have good shadowing, volunteering, and working (tutoring) experience. Have done extensive research but was not published.

Obviously, apply to all the ones you'd like to attend. I don't envision a huge need for a large number of "safety" schools, assuming you have the interviewing/writing skills on par with the rest of your stats.

I applied to 4 with lower stats than yours and got into 2/4 and turned down an interview for another.

All the cheapest ones (UC schools, UConn, Stony, Buffalo, Rutgers, whatever others give you in state). That's at least 6 right there. Add another 4 for giggles and you're set.
