Why waste words explaining your condition? Your essay should be focused on why it was a challenge, how you overcame it, and how you've grown from it, especially in regard to characteristics that will cause you to excel in medical school. I'd use one sentance to describe the name and condition.

How much background medical knowledge should I assume my essay readers will have?

You may be screened by physicians, but you might also have science PhDs, Stats and Ethics faculty, administrators, office staff, etc, so don't get too technical.
