How much time can I take off from residency

The military uses General Medical Officers (GMO) who have had only one year of training before letting them into residency when there is a need for GMO. What you are comtemplating is not unprecedented.
 
However, GMOs in the military have little choice as to where they want to go and what they want to do. Many end up in the least desirable places and doing very boring medicine.
You may get to do some cool military stuff like airborne, air assault, flight surgery, EFMB but not always. Many are too busy deploying to do fun things.
Also, you need to do one year of intenship prior to working as a physician in this country. Not sure about other countries.
 
I knew a guy who quit General Surgery after internship, practiced as a General Practitioner for ten years while also earning a law degree and then came back to do Neurology. It depends on what specialty you choose.
