I am currently going to a 4 year university and considering a pre-med major, I am basically in my second year with no upper division type work (I just recently picked a major). I do not know much about the different "specialties" that medical carreers are divided into.
My questions: When does a student decide what specialty field they want to go into? How can I learn more about each field? Is thier a chance to try different fields before choosing one?

You do not have to pick a specialty before you get into medical school. Many do not pick a specialty until after they actually start clinical rotations. Most have a field of choice by the end of their 3rd year. Interestingly, students often change their choice of specialty during their medical school years!
