It depends on the school. Some like Cornell aren't rolling and evaluate applicants at the end of the process. OHSU interviews through march and doesn't fill their class until the end. Others (think many private schools) have already offered quite a few acceptances and you may be interviewing for waitlists.
I sometimes wonder at schools that wait till the end to fill their class how they remember how much they liked the early applicants and interviewies. That perhaps having an early interview could be a disadvantage.
