Is a 3.58 gpa good enough?

I would say your gpa is low, but not out of range with that MCAT score. Also, if you have any EC kickers to add to your application that pertain to volunteer efforts outside of medicine this may help justify your pursuit of medicine (somewhat ironically).
 
Also, I'm planning on taking the MCAT in a few months, with my target score as 515.

If you get 510+ on the MCAT you'll have a good shot at MD. 515 is within top 10% of all scores. I don't know about your test-taking skills OP but 515 is not as easy to get as some might believe

If you make a 515 youll be competitive for MD schools. Don't bank on a specific school because its such a crap shoot, esp at a place like nyu that gets a bazillion apps. If youre a NY resident the 3.6 is fine and wont hold you back
