Just wondering if it would come off as impressive or just merely desperate.

Depends on the context. If they ask you the question "Why X [our medical school]?
" and you give a list of good reasons and say its your first choice, I dont think that sounds desperate at all.

If they ask "what is the last book you have read" and you answer "X is my top choice medical school", well, thats not so impressive.
 
Nothing wrong with expressing great enthusiasm for their school. It can only help you.

With rare exceptions it will warm anyone's heart (unfortunately in this field there can be some stonehearted people)
