So one of my interviews today was with the Dean of Admissions...should I email him a thank you and then throw in my strong interest, or should I just mail a separate letter of interest? Or both?

I usually do both.
Dr. So-And-So:
Thank you for your time on such-a date. Interviewing at Blankity-Blank University School of Medicine has reaffirmed my interest in your program. I like this and this and this. I enjoyed your question about blah-blah as it really allowed me to blankity.
