LOR from Public Health Prof: Science or Non-science?

How are letters from Public Health profs viewed? Really old threads suggest that it is considered science, which makes sense for classes on statistics and maybe epidemiology, but what about public health classes such as health policy and management or community health and development? Would these be considered non-science?

Lastly, will a letter from my PI, a faculty member in the Optometry department (I get units for research but have not taken a class with PI), count as a science professor?

Schools I'm looking at specifically are UCs and Baylor but also private med schools on the East Coast.

I would be interested in hearing what people have to say about this as well since one of my letters is coming from and health and public policy professor whom is also a PA.
 
Isn't it quite obviously non-science?

I don't see why it would be considered science.
