So say you took AP Calc and received credits at your undergrad for Calc I and II. Now, looking at the requirements for a school that wants a year of Calculus/Statistics and the AP requirement fulfills only one semester of that. Does anyone know if you can use Stats through the Psych department to fulfill that, or would it specifically have to be through the math department?

I think it depends on the school. I know some of them require, or will start to require this coming year, Calculus II. Some only accept biostatistics, but I'm not sure if psych. stat will work. You would need to find out in your state or the schools you are planning to apply to.
