MCAT plan, insight please.

I plan to take the MCAT next year, January at the earliest.

My school goes on the trimester calendar and the fall trimester is from September to November, so I have December off. Would it be wise to study on/off during the trimester and go full on during December break and take the MCAT on January 23? Keeping in mind that my classes start again on January 3.

I think that's a good study strategy. I would not recommend the April dates because that's at the end of the semester and you will have a lot more schoolwork to do versus at the very beginning of the semester when you're just getting started.
 
I agree, and I believe that it will give me time to focus on other things. At the moment, I am trying to figure what type of study regimen I should do during the school trimester, since I do not want to overwhelm myself with MCAT and schoolwork at the same time, but want to gain something out of it.
