When a school asks for a 'non-science professor' to write a LoR, does that mean a professor that isn't science, or someone that is not a professor at all?

It means a professor that doesn't teach science courses. Examples would be English, Classical studies, history etc

Yep, I second that. Add literature and English/any writing course to the list.

it means they want to hear the opinion of someone who doesn't just look at your memorization-based multiple choice test scores, but actually has seen what you have to say and how well you express yourself both in essays and in extra help. think english, sociology, anthro, polisci, history, business, arts, philosophy.... all that good stuff.
