Do not apply until you have the strongest application you can manage. It does you no good to apply with a weak application and have to apply again, or never again.

Frankly, your best bet for getting clinical experience that you lack is to get some kind of certification, or "on the job training" and work in a clinical setting such as a hospital or outpatient office. People are still working in heath care even if the door is barred to volunteers.

I think thta it would be best to apply in 2022 with Jan 2021-May 2022 to buff your application to a high gloss shine.
Also, take as many practice tests for the MCAT as you can get your hands on and do not rush to take the MCAT if you are not scoring where you want to be (which should be north of 510). Like marriage, you should not rush into the MCAT and, ideally, you do it only once.
