As of now the only premed courses I'll be taking my freshman year are intro to biology and lab. Is this normal or should I do more science courses?

Unless you're planning on taking a gap year, you'll probably want to take gen chem this year too, so you can take ochem next year and then biochem junior year, which would allow you to take the MCAT during or after your junior year.
