This is based on info and hearsay I have collected over several years about particular school sensitivities in Texas:
Texas A&M: Strongly gpa oriented, they highly value the 3.9 and 4.0 gpa students.
UT-San Antonio: Definitely an EC school. This school is very interested in students who have a large list of meaningful EC's for that well rounded, interesting person. Almost seems like MCAT and gpa take a back seat to this here.
UTMB: It appears applying early is more important for this school than the others.
UTSW: While gpa is important, it seems like MCAT is king at this school.
UTH: Its hard to say here, decisions seem more random than elsewhere.
Texas Tech: This school places more weight than the others on your potential for becoming a rural, underserved, primary car physician.
TCOM: How well you write your secondary essays on osteopathy, showing that you truly understand the philosophy and are in accord with it.
