What's the best thing I can do one week before the MCAT? (Less than 5 days before I have to take the test.

Run through all your notes - especially the topics you've struggled with, do a few practice problems, and relax. Take care of yourself. Eat good, sleep good.

Start waking up early and going to bed early. Do light content review and stick to only AAMC materials if you choose to do questions. Try to rest and relax!

Yes, like posted above, take of yourself. Get up early. (I had to be up by 4:30 to drive to my center:sleep:)
Start thinking what you will pack for lunch/snacks. (I think it helped to eat what I was going to eat on the AAMC scored.)
Visit the testing center. Mine was extremely hot and the proctors were dinguses.

Prepare yourself, don't do anything crazy. You can breeze through the questions you got wrong and reason through them.
