Is there any benefit at all to add shadowing experience to AMCAS if it was with a PA?
I've only really shadowed PAs - I've worked with doctors, but it would be more considered work experience rather than shadowing.
LORs are coming from physicians I've worked with, this would just be under 'experience'

I've heard from my pre-med advisor that it's okay to shadow multiple types of healthcare professionals (physicians, PAs, nurses, etc) for allopathic schools, so I think you could include it on your application.

You certainly can include it and even "spin it" that you have exposure to all medical professionals and are making an informed decision to physician.
However, do make PA/NP or others the primary or majority of your clinical experience. If you need to discuss these in some indepth way focus on the patient exposure etc.
Did you mean to say do not?
