how early should you start taking those Pearson practice exams? My exam is next month.

Review each in between and pinpoint what you're struggling on.
 
Would you recommend doing the 3 exams every 3 days a week before my exam?
Not unless you feel confident that you will be able to learn the material for topics you're answering incorrectly. IMO, a week in between is enough time to get the material reviewed several times before your next attempt. You want each attempt to be truly reflective of what you learn. If you finish all three and have a couple weeks left, then you can go through all of them again to look for patterns in the content being tested on. The Pearson practice tests are the MOST SIMILAR to the actual PCAT, so keep that in mind. And the score ranges you receive from them are also the most accurate, especially in comparison to Kaplan. Start at least 4 weeks out with these practice tests.
