I think I have a pretty good shot at getting into medical school next year but, being the careful person that I am, I would like to have a solid back-up plan if I don't get accepted. I am a Humanities major, but I am also really close to getting a double major is Physiology. Would you recommend pursuing a double major if I don't get into med school the first time around and then apply again?

I wouldn't. Thats a lot of extra money for something that won't dramatically affect admissions committees. I doubt a second major would increase you odds much. It would be better to, for example, get more clinical experience through a job or volunteering.
