Please help--which humanities LOR should I get?

How important is the humanities LOR? I have three options of who to get recs from:

(1) Teacher from a literature class I took a year ago, who knows me pretty well. Problem is that I didn't participate THAT much, but I still got an A and I think the teacher likes me. Also, she's not a professor, but some kind of senior lecturer. If I ask her, I would take a class with her this semester to make sure she has a good opinion of me.

(2) Two teachers from two Spanish language classes I took (co-recommendation). Both know me really well and would write a good letter. Problem is that my premed adviser (who is on the adcom for a top 5 med school) told me last week that Spanish language classes aren't real humanities unless the teachers would be able to talk about some literature we read or something, which we didn't. Also, one teacher is a senior lecturer, the other is just a lecturer.

(3) Take a class taught by either a senior lecturer or an actual professor (although it probably won't be a professor class -- my school is extremely weak in the humanities and only a few classes are taught by professors; the rest are instructors/lecturers), do really well in it, and ask him in April or so to write it for me. He'll probably finish it a week or so after classes end, in the beginning of June, and then my pre-med adviser can write his letter at that point. This is cutting it a little close and also banking on me doing well in this class, which I hope I can pull off.

Which option sounds best? What is a humanities LOR supposed to convey, so that I can think about who is going to be able to convey that the best? For example, science profs usually convey stuff about a student's ability to think scientifically and do science.

If it were me, I'd go w/ 1 or 2, since 3 isn't necessarily a sure thing. I'd ask whoever I thought knew me best and would write the best letter.

I used a Spanish teacher's LOR for my non-science letter, and I've done pretty well w/ my applications this cycle. I wouldn't worry too much about that.
 
I think it matters less what subject your LOR writer taught and more what they actually say about you. It makes no sense to dismiss an LOR because of the discipline they focus in.

I would go with 1 or 2. Choose whoever you feel knows you better as a person and/or as a student and can give you the best reference.
