In terms of completing prerequisites, is it important to have all of the prerequisites completed by the time you apply? If so, how do I communicate with the schools that some of my courses might satisfy their English requirements? When do schools even check whether or not you satisfy all the requirements? Is it a factor for interviews/acceptances?

You don’t have to have them all completed by application time, but you will before MATRICULATION.

Some schools are going to be different with how they see not completing prereqs yet. One school I interviewed at this past cycle emailed me saying they want to interview me but I have to show proof of enrollment in my last prereq I needed completed (Ochem 2 lab) before I receive an official interview invite. Once I enrolled and sent proof, I got an official interview invite.

It can play a part in an acceptance. I am not as knowledgeable about that though.

Thanks for your reply! Did you have that last pre-req listed under the AMCAS coursework as a future course?

No because i wasn’t planning on taking it. I wanted to avoid all that NMR 😂😂What they will have you do is send transcripts proving you completed the class. If you already plan to take them, then you can list them as future courses in AMCAS.
