No, you can indicate your MCAT as a future MCAT since it was 2 days ago. Gotta love how much sense that makes 😛
Edit: Also note that most schools won't look at your application until your MCAT score is available anyway. But it is good to submit it now so that the verification process is complete, and your app is ready to roll as soon as July 18 rolls around.
So what I should do is finish all other sections of the AMCAS, including the personal statement, and get my school to send them the transcript, and everything else, except indicate that my MCAT is a future MCAT?
And then come July 18, they'll give me the opportunity to include those scores in it? Do I also have the opportunity to change anything on there after verification? Like... if I wanted to revise my personal statement, can that still be done after verification?

Yes, you can update AMCAS with your score. I'm not exactly sure what the process is, I'd call AMCAS to confirm it, but it can definitely be done. If I'm not mistaken, the process if automatic - your MCAT score is automatically sent to AMCAS - but just make sure.
