I've been told that book chapters are relatively worthless on a science CV (as far as jobs and tenure track promotions go) and that it is MUCH more important to have peer-reviewed papers. How true is this?

Correct, unless the book is truly famous. If the residents use the book... then it becomes important on the CV to that institution.. but what is the chances of the residents using a book you wrote? Very low.... Peer reviewed publications are way stronger.
