I will be working in a psychology lab in my university, but I was wondering how grad schools would know the amount/length of time that I spent as RA? Would I just indicate it on my resume/application for grad school or do you need some sort of verification from the supervising professor?

Well, usually you put the the approximate time frame on your CV (at least something along the lines of '2012 - 2014' , etc.) Also, if you plan to have the professor who's running the lab write you a letter of recommendation, they will usually state in the letter for how long they've known/worked with you.
