I'm not sure that its "over used". It is a well understood term and the right one to use, as it effectively conveys what you are asking about.
Agree with aPD; pick one person per program to approach for an observership, at least at the same time. If multiple people are contacted "all the time" perhaps this is why so few observerships result in good LORs and matching.
