Medical Should I apply this year or next year?

Hello! I'm a post-bacc student finishing my formal post-bacc program with a 3.8 (but I have a 3.2 cGPA and 2.99 sGPA 🙁 but strong upward trend from a top public school); however, my MCAT score hasn't been where I wanted it to be (506 on FL1) for 8/14 (but have yet to do AAMC Section Bank/QPack, and feel like I just haven't been studying my best overall having been affected with everything going on) and I was wondering if it would be a better idea to push back my MCAT exam date to September (how late is reasonable?) and still apply this cycle, or to apply next cycle instead (or keep my 8/14...though I don't think anyone would recommend this, it seems like I've only been able to make jumps when I put pressure on myself, with everything happening).

September feels incredibly late, and I'm not sure how the schools' COVID policies would affect me as a post-bacc student without an MCAT score and applying so late. However, all of my LOR's have already been collected, and I've already had some trouble cutting down my 15 activities, so I'm not sure if the things happening this upcoming year (internship with a community development program and my research manuscript is in its final stages to submit currently) will significantly change things. Sometimes it feels rash, but also I'm wondering if I would regret not trying this year as well, considering I was hoping to. I think I would just appreciate any words of wisdom with the situation considering how lost I feel right now.

Background/application-wise: grew up in MUA and currently moved back there right now, low-SES/disadvantaged but Thai (I never know what this counts as), first-gen in sciences (but parents educated), etc. with an application focused on underserved communities (research, clinical experiences with 1000+ hours--scribing in a safety-net and organizing health fairs, founded an org on campus), arts (graphic designer, cultural arts), and children (have a teaching permit/worked in daycare, research is community-based with children).

Unfortunately, my post-bacc director has been incredibly busy to really offer any guidance or follow us these days, but it would mean so much! I think it's just been difficult to focus when I wake up every day swinging one way to another. Thank you so much for your time!
The quick and dirty answer? Take the MCAT when you are ready, even if that means applying next year. In the meantime, work on strengthening your application maximally.
