I just watched the Khan Academy video on this:

It was a bit overwhelming. I feel like there might be a lot of extra information I don't need. What exactly should I know about this topic?

Which exam? Current MCAT or the 2015 MCAT?

For the current MCAT, I don't believe the topic is directly tested, though it will be helpful to have some knowledge of the topic. It wouldn't be outside the realm of possibility to have a passage that describes Michaelis-Menten kinetics.

For MCAT 2015, you'll definitely have to know it, as it's a fundamental topic in biochemistry. Understand what each term means, and what effect the differing types of inhibition have on Vmax and Km (and what these graphs look like).
