Is the reason that C2 is a stereogenic center because the CH2s that it is attached to have different R groups?

Hmm. I'm not sure, but I suppose the fatty acid chains could be different lengths. Was this a passage based question? Did they specify anything that might lead you to believe that the chains are different links or is that an assumption they expected you to make?

yes. the site indicates that each R group is different
