If I wanted to take Organic Chemistry or another science course at a community college over the summer, would adcoms look unfavorably on my decision? (If I were to take the course at a community college, the grade will not transfer - just the credits.)
 
some schools won't accept community college credit for pre-reqs at all...others will definitely look down on the decision assuming you chose to take it at a community college because it would be easier. the fact that the grade won't transfer is also probably going to hurt you because most schools will want grades for all of your pre-reqs.

if, however, you are sure about the schools you want to apply to and you know they won't care (there are a few), then go for it. otherwise, take it at your regular school, get grades, and take some other credits in the summer instead if you're so inclined.

Yes. Particularly if you attend a school that is known to adcoms as having a hard Organic Chem course and this is most likely to be known to adcoms if your college pumps out a large number of pre-meds.

It will be really bad if you have a really good gpa (taking an easy way out to protect the old gpa) or if you have a marginal gpa (you could hardly hack the easier courses in college so you took the easy way out with the notoriously hard organic chem).
 
From my understanding, most (and I said most here) schools do not care where you took that class. However, taking that class over a shortened summer session seems to be less than advisable. From what I understand, it is HARD, and 8-10 weeks is not an ideal time frame. However, the fact that it doesn't transfer is troubling. You may want to look into that.

Best advice, call the schools you're looking into applying to, and ask them.
