If you want to travel and learn about health care in the developing world, you might think about the Crossroads Africa program. It was actually the original model for the Peace Corps.
I did health service project in Uganda with Crossroads during my summer between first and second year (probably a little late... it's better for pre-meds). It's challenging, but a great experience.
