I need to take 2 chem lab courses that are 3 units each and they're supposed to be really hard. What do med schools think about taking labs credit/no credit? Would it be better to do this than to risk getting a bad letter grade?

I'd take 'em for grades. You will be expected to perform in "really hard" situations, this will demonstrate your ability to do so. Taking the easy way out will not make things easier in the long run.
