Hi! So I am currently a sophomore at a university in Texas and I have already taken one semester of Spanish, and plan to eventually study abroad in a spanish immersion program. I know it is important to learn Spanish for medical school, so how many semesters do you think I should take?

As many semesters as you have room for in your class schedule, I'd say

As many as you want. It's a very nice skill to have but is definitely not mandatory
