Taking two gap years...

So I just graduated and decided the best thing for me to do will be to take two gap years instead of one (I can already tell I am going to enjoy my time off!). I just landed a nice job at a medical school in Texas and will need to wait till next cycle in order to gain residency status here. Just had a quick question, since I was planning on applying this year, I have all of my letters lined up on interfolio. Will those still be good for next application cycle?
