If this question is asked during interviews, are they looking for something more of the actual work I did or something more introspective, like what I learned?

I was thinking of including both but it becomes a pretty long answer.

"tell me about your research" is exactly that. Tell about the research.

if someone wants to ask you about what you learned, they'll ask that specific question

Explain what the project was and what your role was. Illustrate that you understand the methods being used and the results (if any).
