I am taking organic chemistry this summer and planning to take DAT sometime soon.
How long do I need to prepare for DAT?
(kaplan said, "at least three months", does it mean full time study for three months? )

Everybody told me that I should apply as soon as possible. Can I have a higher chance for admission if I apply now even without DAT score?

I say apply even before you take the DAT, AADSAS takes like 6 weeks to process your application.
As for how long to study for the DAT, I took about 1 week and I did very well. i think 3 months is ridiculous. Honestly the max time you could possibly need is 1 month. If you have taken all of these courses already, you will find the material fairly easy and the questions very basic. Just practice and you will get the hang of it.
