Transfer credits...

What happens if i transfer from a cc to a University, but that class happened to be an A, or some grade you would want to keep. Does that grade not get totaled in your sGPA and/or cGPA in AMCAS?

All your grades from all your schools are included in your gpa on AMCAS (whether you like it or not). You have to submit a transcript from every school you have attended.
