Trying to figure out my undergraduate endgame

Hello all!
I am a kinesiology major at NMSU in Las Cruces, NM. I am planning on applying at the beginning of the 2015 cycle for a hopeful 2016 matriculation. I am finishing up my coursework this summer and will be completing an internship with a local orthopedics physician in the fall as part of the final degree requirements. I should be graduating (in the fall) with a cGPA of around 3.2 and sGPA of around 3.6. Other pertinent accomplishments/prerequisites/preparations are:

- I was recently elected president of the kinesiology club here on campus and will serve (tentatively) for the summer and fall semesters.

- I have participated for 1 semester thus far in student research under our biomechanics professor and hope to be able to complete more in the coming semesters.

- I have contacted multiple physicians across multiple specialties who are willing to let me accumulate shadowing hours with them. Some of these will take place in New Zealand with an American physician that is currently practicing there (Could be a plus? I don't really know.). I plan to do this shadowing between graduation this fall and the beginning of the '15-'16 registration cycle (June 2015)

-Pending completion of an exam and confirmation of my graduation I will also be in possession of a CSCS certification (The National Strength and Conditioning Association's Certified Strength and Conditioning Specialist cert.) at the time that I apply for school. This will also certify me for several reasonably paying positions of which I hope to work in the 2 years that I'll have between undergrad and (hopefully) med school.

- Starting school as a music major, I also completed two years in major campus ensembles such as marching and symphonic band

I'm not interested in "knowing my chances" and I am very (very, very) aware of my low GPA situation. I thoroughly understand that that fact lowers my chances considerably. My goal with this inquiry is to get help with maximizing the quality of the parts of my application that I can still bolster. What I would like to know is:

- Do I take the 2014 or 2015 MCAT? I'm leaning towards the 2015 because I'm afraid that some of my schools will make the "hard transition" to only accepting 2015 scores. If 2015, are there any other classes I should take beside basic psych and sociology classes (which I have completed) to prepare?

- Should I stay a semester after I graduate to complete additional coursework? If I do this, I could potentially obtain a music minor, serve another semester as kinesiology club president (1 year term) and spread out my remaining prerequisites (not taking biochem and physics II at the same time this summer).
