Has anyone done this online program? I am wondering how difficult it is and if I can juggle other things such as full time work and volunteer activities while doing this.

What's your goal for the program? If it's to get a better understanding of physiology in preparation for medical school, that's probably a reasonable idea. It's unlikely to help your application though.
Given that it's asynchronous, you shouldn't have a problem especially if you limit the number of courses per semester.
