Your list is realistic and you should at the least receive several interviews from your target and safety schools.

Not all Hispanic people are URM, for the AAMC the definition is Mexican American or Puerto Rican. So if you are one of those ethnicities then applying to your top reaches is feasible but if not, your chances are significantly lower.

I'm not sure if Argentina is considered UIM. But as Chromium Surfer said some schools have their own definitions based on their needs. You're fluent in Spanish? That is always a bonus. You could call some of your top schools and ask them about the UIM issue. I'm not sure they'll tell you the truth but it can't hurt. Good luck.
