Has anyone ever heard of some of the med schools (Harvard, Wash U, UCSD, etc.) waiving their requirements for a second semester of calculus?

No...I would think that it wouldn't be likely unless you were an outstanding applicant otherwise (ie: have a 40S, 3.9, years of shadowing and have spent the last 2 years running a medical clinic in Micronesia), but it would be best to contact those schools first.

Do most schools require one semester of calculus? I thought you could substitute statistics.

Some require calculus, others let you substitute. You should check the schools you want to apply to. Or just take calculus to be safe.

I had an issue with this - because I had received credit for the first 2 quarters of Physics via AP, I had to request a waiver from Pritzker (University of Chicago). This involved me sending them a written letter explaining why I was missing the courses, and how I had pursued a well rounded education in the sciences elsewhere (for me, I facilitate in a science workshop program, so I talked about that). Fortunately, my waiver was granted. Pritzker mentioned this directly on its website - but if I were you, I would e-mail/call somebody from admissions at whatever schools you're looking at and get the info directly from them.

Most schools are sticklers for the prereqs. I've actually even had schools (not the ones you listed) indicate that literature courses don't count as english if not offered by an english department.

A lot require only one semester of Calc. Many of the upper tier schools require two. Some require a year of "college math" including Calc I and another math of your choice (including Statistics).
