Clinical Experience: CNA (250 hours) paid and patient transporter volunteer at local hospital (100 hours)
Research: Neurobiology lab 400 hours
Shadowing: 200 hours (primary care, family med, colorectal surgery, neurosurgery and orthopedics)
Non-clinical volunteering: Loaves and Fishes food shelf, homeless shelter, and Feed my starving children (160 hours)
Other extracurricular activities: Professional athlete contract, 5 year D1 athlete at University, Captain my last year, won 6 different conference academic and athletics awards, volunteered numerous summers on campus with disabled children for expansion of sport, team events with children at the children's hospital each August, and math tutor in highschool

Would really appreciate anyones advice on my process and if I need to go take a year to do SMP to improve grades, better MCAT, and/or hold off to get way more hours?

Be aware that Midwestern has extremely high tuition and COA.
Have you checked OOS acceptance rates for the public schools on your list?
Although you have the minimum number of expected hours in most categories, be aware that Rush , Loyola and the other Jesuit schools expect way more than the minimum from their candidates.

Howard and Meharry mainly admit applicants from the African American community. You have several state public schools on your list that admit few non residents with your stats and non connection to the state (Brody does not admit non residents).

I'll let others chime in. I think you can still do some DIY courses: microbiology, general physiology, histology, immunology, and human genetics are some that cross my mind at this point.

You have a few more biomedical science courses to take. Your GPA is high enough that to me an SMP Isn't absolutely necessary (read the How to Choose a Postbac/SMP admissions guide from SDN), as long as you can get more A's to boost that uGPA and BCPM up. Some of us like to see the upward trend. Had your sGPA/BCPM GPA been below 3.2, I would be more inclined to recommend SMP depending on what you took. Again, I open this for others to comment... usually a neuroscience degree has a bit more psych classes than biomed classes, but I can't speak for all neuroscience majors.

Keep building on your clinical and non-clinical experience hours.
