Your total lack of patient contact experience will limit your chances for interviews. You should accumulate 50 hours of in person physician shadowing and 200+ hours of clinical volunteering with patient contact in the coming year in case you need to reapply in 2022.
Some of your schools are unrealistic. U Washington accepts less than 1% of applicants who are not from states in the Northwest. UC Davis admitted only 1 non resident last year. New Mexico 2 non residents. UC Riverside ZERO non residents.
I suggest these schools:
All 4 SUNYs
Hofstra
Einstein
Mount Sinai
Rochester
U Colorado
UCSF
UCLA
USC Keck
UCSD
Kaiser
California Northstate
California University

You would have a great application if you had clinical experience. At the moment, I'm not sure how you would write about switching from engineering to medicine or what you would say during your interviews. So this needs to be priority. Your GPA is ok and MCAT is excellent - the rest of your activities are great.

Faha has given great suggestions for schools to add. You absolutely need to apply to all state schools. Seems like you want to come to the west coast but you don't have cali residency yet - you need to emphasize your ties somehow, either through secondaries or establishing residency.
