Clinical Exp:
125 hours hospital volunteering - helping with discharges/pushing wheelchairs/etc
200+ as a clinical research assistant (current position) - lots of aiding in procedures/interfacing with patients

Research Exp:
600 in a materials lab (2 posters)
1000 at a pharma company
1000 at a neuro lab (1 paper middle author)

Shadowing: General Surgeon, Addiction Psychiatrist, Neurologist (15 apiece)
Volunteering: 400 hours with an after school program for disadvantaged kids
ECs/etc: led undergrad device design team, won some awards for a few research posters

Having a lot of trouble balancing upper tier schools with safer options. Current list as follows

Penn
Columbia
WUSTL
NYU
Vandy
U Chicago
Northwestern
Cornell
Pitt
Case Western
Mayo
Mayo AZ
Icahn
BU
Brown
Einstein
Keck
UofA Tuscon
UofA Phoenix

Again, feeling pretty top heavy. Not sure if my ECs match my stats/what tier of school I should be aiming for. Definitely interested in continuing to do research. Planning for 20-30 apps in total.

Any advice is appreciated!

Your list is not too top heavy with your stats and you should receive several interviews. Your Arizona schools are where your best chances are.

Thanks Faha! Any thoughts on which schools to round out my list with?

Do you think my ECs would keep me competitive at top 10 schools?

Your ECs are on the low-average side for top 10s but it couldn't hurt to throw a few in with your stats.
