Two semesters of General Chemistry - that's all you need to do well on the MCAT. Biochemistry, Molecular Biology, and Genetics would also help but they certainly aren't necessary (these classes go into more detail than the MCAT does) - I didn't take them until after I had taken the MCAT and I did fine on the test.
