I often read/hear US students talking about receiving “honors” from clinical rotations or a subject, such as “getting an honor in chemistry”. It seems as if getting honors is a big deal and have somewhat an impact on matching success rate. As an European student, I’m not familiar with the term, what is honor in this context? Does it simply mean you scored an A at the end of the course?

Like the term Honor Student.

Grades are tiered.

Fail
Pass
High Pass
Honors Pass

Each school has the cutoff for what an "Honors Pass" is.

Here is how my school did it:

Fail: Below 60
Pass: 60-84
High Pass: 85-94
Honors Pass: 95-100
